On the Fraijanes (pronounced free-haan-ays) Plateau, east of Guatemala City, this smoky, spicy, sweet varietal flourishes in the deep rich volcanic soil of the region.

Ever since discovering the amazing Earth and Sky organic blend, my regular coffee deliveries have come from Craven's Coffee. Recently, I decided to try another of their offerings: Guatemala Fraijanes.

Dark roast, very nice, even color. Evident oil on the freshly roasted beans, which give off a wonderfully (but not overpoweringly) charcoal aroma.

Average flavor; balanced, but not particularly complex. Curry-like notes of perhaps cardamom or cumin. Smoky aroma gives way to a slightly chalky flavor; earthy aroma reveals delicate floral hints.

The bag indicates that this varietal comes from Finca Vista Hermosa, which is a high-quality cooperative in the Fraijanes sub-region of Huehuetenango and a coffee region that is often overshadowed by the Antigua coffees, but which is increasingly receiving the respect it deserves. Consistent descriptions of Fraijanes beans may remain elusive, but the quality of the end product certainly isn't. Craven's Guatemala Fraijanes is a pleasant, easy-to-drink coffee that nicely exemplifies the best of Central American beans.

I discovered Craven's Coffee while searching for a blend that was a favorite of mine at a now-closed coffee shop. When I stumbled upon Craven's Earth and Sky organic blend, I thought I may have found what I was looking for. Upon inquiring, I found out that, alas, Craven's had never shipped any bulk orders to this area. Nevertheless, based on the description (knowing my love of central American beans), I thought their Earth and Sky blend worth a try anyway. As you will soon learn, I was very pleasantly surprised!

This blend is phenomenal. Not only is it a suitable replacement for an old favorite; it is even better. This blend takes the best characteristics of some of my favorite varietals, and yields an instant favorite. Craven's Earth and Sky organic blend has earned a spot among my normal coffee purchases.

This is a simple and bright coffee with a rustic aroma. You can almost hear the Mexican music playing in the background for a Cinqo de Mayo clebration as you enjoy this lively cup. It's a perfect coffee to start the day!

I previously reviewed the Organic Mexican Chiapas beans from Texas Roast, but I would like to revisit the offering. I recently received another order of the Chiapas, and based on my previous review, these beans were roasted slightly darker.

Mexican varietals remain among my favorite. The Organic Mexican Chiapas from Texas Roast remain a fine representative - nicely roasted, well-balanced, and an overall enjoyable cup of coffee.

REVIEW: Texas Roast Organic Mexican Chiapas

The FedEx delivery man brought me a very good package over the weekend: the Organic Mexican Chiapas beans I ordered from Texas Roast, which the company describes as follows:

This is a simple and bright coffee with a rustic aroma. You can almost hear the Mexican music playing in the background for a Cinqo de Mayo clebration as you enjoy this lively cup. It's a perfect coffee to start the day!

That description is pretty accurate. Upon opening the bag, the aroma almost immediately sent me south of the border. (I already have a fondness for Mexican varietal beans, and this one does not disappoint!) The brew tasted darker than the roast appears, but for my tastes I found it to be well-balanced - and I lean more toward darker roasts in general, so I've enjoyed every cup brewed so far from this bag. Nice, medium body, with a hint of brightness in the acidity.

So far, based on this bag, I am impressed with what Texas Roast has to offer!
